Aloo Ki Sabzi

This is the only recipe of aloo ki sabzi you will ever need!

It is spicy, chatpati and so versatile…goes so well with plain roti, chawal, parantha, kachori or puri. I always cook this on special occasions or on days when I just need some pick me up. This recipe is so simple yet is packed with so much flavors.

Banaras mein subha ka nashta…

One of our favorite breakfasts in Varanasi is to wake up early and go to Vishwanath Gali for Kachori Sabzi and Jalebi. You can never imagine going to Vishwanath Gali in the day time in your own car, it gets really crowded and walking or rickshaw is the only way to navigate the sea of crowd. I don’t mind that but when you are going for a meal that is the last thing you want to do on your way to it 🙂

Traditions around Food!

Going for Kachori sabzi is a tradition now not only because it is an amazing experience to wake up early on weekends, take bath so early because you are visiting Vishwanath Mandir for sure, wrap a sari around and pack in a car with my dear mom-in-law chanting mantras under her breath, my cutest father-in-law who gives obvious directions to his dutiful son who is mockingly asking if he needs to turn left where there is only a left turn :P, fresh air on our faces with windows rolled down. And later walking through the narrow corridors which are rightfully called “Bhul bhulaiya” to our favorite spots to devour the best kachori sabzi in town. Finishing off with Garam Jalebi…. aahhh Divine!

For those of you who cannot just go to Vishwanath Gali, try this recipe!

 1 tbsp Mustard Oil
 1 tsp Cumin
  tsp Asafoetida/Hing
 2 Dry Red Chillies
 2 tbsp Dried Fenugreek Leaves/Kasuri Methi
 2 Big Fat Tomatoes
 1 tbsp Ginger
 3 Green Chillies
 ½ tsp Turmeric/Haldi Powder
 2 tsp Red Chili/Lal Mirch Powder
 1 tsp Coriander/Dhaniya Powder
 4-5 Boiled Potato
 1 tbsp Clarified Butter/Ghee (optional)
 Salt to Taste

Puree Tomatoes, Ginger and Green Chillies together and keep aside.

How to make Aloo ki Sabji?

Heat oil and temper it with Cumin, Hing & dry red chilies. Add the Kasturi methi and cook for 30 Seconds.

Pour in the tomato mixture and season with salt according to your taste. Cook for 5 Minutes

Add all the spices and cook for another 2 Minutes.

Add boiled potatoes and mix in the mixture. Pour some water to reach the desired consistency, cook for about 5 more Minutes.

Mix in fresh coriander and you are done!

 1 tbsp Mustard Oil
 1 tsp Cumin
  tsp Asafoetida/Hing
 2 Dry Red Chillies
 2 tbsp Dried Fenugreek Leaves/Kasuri Methi
 2 Big Fat Tomatoes
 1 tbsp Ginger
 3 Green Chillies
 ½ tsp Turmeric/Haldi Powder
 2 tsp Red Chili/Lal Mirch Powder
 1 tsp Coriander/Dhaniya Powder
 4-5 Boiled Potato
 1 tbsp Clarified Butter/Ghee (optional)
 Salt to Taste

Directions
