Leftover Idli recipe is just fried idlies in some ghee and it is a dish in itself. Sometimes I make Idlies to make this recipe as it is so crispy and yum!
We are staying in and keeping ourselves busy. I am cooking my hubby’s favorite food every day because I am trying to fatten him up as he was away from home for 4 months! He loves Idl… but he loves leftover idli fry more 😃 this is a ritual snack/meal we cook a day after idli dinner. I used Gits instant rice idli mix and they came out so yummy! Do try this easy snack… so delicious and quick!
Heat mustard oil and add ghee, before it heats too much temper it with mustard and Cumin seeds. Add fresh curry leaves followed by the bite-size idlies. Fry on medium-low heat and add more ghee if required. roast for few minutes until the idli pieces are golden brown. Season with salt before removing from heat.
